CORNFLAKE PIE CRUST
One 9-inch crust

This crust pairs nicely with citrusy fillings, like the one for Lemon Meringue Pie, or use Lemon Curd and whipped cream.

Grind until fine in 2 batches in a food processor:

  • 6 cups cornflakes

Transfer to a large bowl and add:

  • 6 tablespoons (3 oz or 85g) unsalted butter, melted
  • ¼ cup (50g) sugar

Stir until well blended. Press evenly into a 9-inch pie dish and bake as directed in About Crumb Crusts.
