Vary a basic pie or pastry dough for a double crust by adding to the dry ingredients one of the following:
- Up to 1 tablespoon poppy or caraway seeds
- 1 tablespoon chopped fresh herbs, such as thyme or rosemary
- Finely grated zest of 1 lemon or orange or 2 limes
- 1 cup grated hard cheese, such as Parmesan or Romano (4 oz or 115g)
- Up to 3 tablespoons toasted sesame seeds
- ½ teaspoon ground cinnamon and/or grated or ground nutmeg
- 2 tablespoons (10g) unsweetened natural or Dutch-process cocoa powder
