APPLE FRITTERS
About 36 small fritters

These bite-sized fritters are soft and loaded with apple bits. For a sweet and salty treat, stir 4 ounces (115g) sharp Cheddar, cut into small cubes, into the batter along with the apples. Please read about Deep-Frying.

Mix together in a medium bowl:

  • 1 ⅓ cups (165g) all-purpose flour
  • ¼ cup (50g) sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • (½ teaspoon ground cardamom)
  • ¼ teaspoon salt

Whisk together in another medium bowl:

  • ⅔ cup (155g) milk
  • 1 large egg yolk (white reserved)
  • 1 tablespoon (15g) butter, melted

Stir the wet ingredients into the flour mixture until smooth. Pour into a shallow baking dish:

  • 3 tablespoons lemon juice

Add and toss to coat:

  • 4 large firm apples, peeled, cored, and cut into ⅜-inch cubes

Heat to 365°F in a deep-fryer, deep heavy pot, or Dutch oven:

  • 3 inches vegetable oil

Beat until stiff but not dry:

  • 2 large egg whites

Fold the egg whites into the batter, then gently fold in the apples. Drop the batter into the oil a heaping tablespoon at a time, being sure to scoop up some of the apples each time. Fry in batches, turning once, until golden brown and puffed. Drain on paper towels. Dust with:

  • Powdered sugar
