Whisk the wet ingredients into the flour mixture until barely blended, leaving the batter lumpy. Fold in:
Beat until stiff but not dry:
Fold the whites into the batter.
Heat to 365°F in a deep-fryer, deep heavy pot, or Dutch oven:
Drop the batter by 3-tablespoon dollops, a few at a time, into the hot oil and fry until golden brown, 3 to 4 minutes. Drain on a rack or paper towels.
