These waffles are one of the quintessential Belgian street foods, served straight from the iron and glistening with caramelized pearl sugar. Pearl sugar can be hard to find, but it is usually available at specialty markets that sell European foods. In a pinch, use sugar cubes crushed into pearl-sized bits.

Prepare the dough for:

  • Brioche

through the refrigeration step. Fold or knead in:

  • ½ cup pearl sugar

Divide the dough into 10 pieces.

Preheat a waffle iron. Preheat the oven to 200°F.

Depending on the size of your waffle iron, you may be able to cook multiple waffles at a time, or as few as two. Place the balls of dough in the waffle iron and cook until deeply browned and caramelized. Transfer to a baking sheet and place in the oven while you cook the remaining waffles. Serve warm, as is (the waffles are sweet and rich enough to need no adornment), or topped with any of the following:
