CHOCOLATE WAFFLES
About 8 waffles

Delectable with vanilla ice cream. These waffles are delicate, so remove them from the iron carefully.

Preheat a waffle iron.

Whisk together in a large bowl:

  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (200g) sugar
  • ½ cup (40g) unsweetened cocoa powder, sifted if lumpy
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Whisk in a medium bowl until frothy:

  • 2 large eggs

Whisk in:

  • 1 cup (235g) milk
  • 1 ½ sticks (6 oz or 170g) unsalted butter, melted
  • 1 teaspoon vanilla

Whisk the wet ingredients into the flour mixture with a few swift strokes. If desired, fold in:

  • (½ cup mini chocolate chips)

Cook, keep warm, and serve as for Waffles. This batter tends to thicken up as it stands. If needed, add about 1 tablespoon additional milk to the batter to loosen it.
