Gently stir any of the following into the pancake batter after the liquid and dry ingredients have been mixed together:
- 1 cup shredded sharp Cheddar (4 oz or 115g)
- ¾ cup fresh or unthawed frozen blueberries or raspberries
- ¾ cup finely diced or mashed ripe bananas
- ¾ cup unsweetened pumpkin puree
- ½ cup raisins or any finely diced soft dried fruit
- ½ cup finely chopped toasted walnuts or pecans
- ½ cup crumbled cooked bacon
- ½ cup shredded sweetened coconut
- ½ cup chocolate chips or chopped chocolate
