GARLIC BREAD
6 servings

Serve this extra buttery, extra garlicky bread alongside spaghetti with tomato sauce—perhaps with Italian Meatballs. Any leftovers make deluxe croutons for a Caesar salad.

Position an oven rack in the center of the oven and preheat the broiler.

Cut in half horizontally:

  • 1 baguette

Combine in a small saucepan:

  • 4 tablespoons (½ stick) unsalted butter
  • ¼ cup olive oil
  • 4 garlic cloves, minced or grated on a rasp grater

Heat over medium-low heat until the butter is melted and the garlic sizzles, about 1 minute. Place the baguette on a baking sheet, cut sides up, and brush with the butter mixture. Sprinkle with:

  • ¼ cup minced parsley
  • 3 tablespoons finely grated Parmesan

Broil until the bread is lightly toasted. To serve, cut into pieces.
