SICHUAN PEPPER SALT
About ⅓ cup

Combine in a small, dry skillet and toast over medium heat, shaking the pan, until the peppercorns begin to smoke:

  • 2 tablespoons Sichuan peppercorns
  • 1 teaspoon white peppercorns

Transfer to a mortar or spice grinder and grind to a coarse powder. Add:

  • 3 tablespoons Diamond kosher salt
