ZA’ATAR
About ¼ cup

This toasty, tart, and herbal Middle Eastern blend may be sprinkled on grilled flatbread, roasted vegetables, salads, kebabs, or hummus. For the herb callez za’atar, see Marjoram.

Place a small skillet over medium heat and add:

  • 2 tablespoons dried thyme
  • (2 teaspoons dried marjoram)

Toast, stirring frequently, until fragrant, about 2 minutes. Transfer to a spice grinder and let cool completely. Add to the spice grinder:

  • 1 tablespoon ground sumac

Grind until fine. Transfer to a small bowl and stir in:

  • 1 tablespoon toasted sesame seeds
