Combine in a saucepan and bring to a simmer:
- Six 12-ounce bottles dark beer
- 1 cup cider vinegar
- ½ cup packed dark brown sugar
- 1 large red onion, chopped
- 4 garlic cloves, chopped
- 2 serrano peppers, chopped
- 2 bay leaves
- 2 teaspoons salt
- 1 teaspoon black pepper
Simmer for 15 minutes. Remove from heat, remove the bay leaves, and cool before using.
