Best with chicken, vegetables, and stronger fish. Do not marinate fish for more than 30 minutes or meats for longer than 4 hours.
Whisk together in a small bowl:
- ½ cup vegetable oil
- Finely grated zest of 1 lemon
- ⅓ cup lemon juice
- (2 tablespoons Dijon mustard)
- (2 tablespoons finely chopped thyme, oregano, rosemary, marjoram, tarragon, or a combination)
- 6 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
