LEMON MARINADE
About 1 cup

Best with chicken, vegetables, and stronger fish. Do not marinate fish for more than 30 minutes or meats for longer than 4 hours.

Whisk together in a small bowl:

  • ½ cup vegetable oil
  • Finely grated zest of 1 lemon
  • ⅓ cup lemon juice
  • (2 tablespoons Dijon mustard)
  • (2 tablespoons finely chopped thyme, oregano, rosemary, marjoram, tarragon, or a combination)
  • 6 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
