FETA OR GOAT CHEESE DRESSING
About 1 ¼ cups

Serve with a Greek-style salad or pasta salad, over sliced tomatoes, or as a dip for crudités.

Combine in a blender:

  • 1 cup crumbled feta or fresh goat cheese (4 ounces)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon minced fresh oregano or ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Blend until smooth. With the machine running, add in a slow, steady stream, blending until smooth:

  • ⅓ cup milk

If the dressing is too thick, add a little more milk as needed. Taste and adjust the seasonings. Use immediately, or cover and refrigerate for up to 5 days.
