THOUSAND ISLAND DRESSING
About 1 ½ cups

A relative of Russian dressing, Thousand Island is a classic topping for a wedge of iceberg lettuce. Without the hard-boiled egg, it also makes a good “special sauce” for burgers and sandwiches.

Stir together in a small bowl until well blended:

  • 1 cup mayonnaise, store-bought or homemade
  • ¼ cup mild, tomato-based chili sauce or ketchup
  • (1 Hard-Boiled Egg, chopped)
  • 2 tablespoons pickle relish, minced pickles, or minced green olives
  • 1 tablespoon grated or minced onion
  • 1 tablespoon minced chives
  • 1 tablespoon minced parsley
  • Salt and black pepper to taste

Taste and adjust the seasonings. Use immediately, or cover and refrigerate for up to 5 days.
