Serve over mixed greens or spinach with goat cheese or grilled chicken.
Whisk together in a small bowl:
- 3 tablespoons balsamic or red wine vinegar, or to taste
- 2 tablespoons minced toasted walnuts
- 2 teaspoons Dijon mustard
- 1 ½ teaspoons minced shallot
Add in a slow, steady stream, whisking constantly:
- ⅓ cup extra-virgin olive oil
- ⅓ cup walnut oil (or use an additional ⅓ cup extra-virgin olive oil)
Taste and adjust the seasonings.
