WALNUT VINAIGRETTE
About ¾ cup

Serve over mixed greens or spinach with goat cheese or grilled chicken.

Whisk together in a small bowl:

  • 3 tablespoons balsamic or red wine vinegar, or to taste
  • 2 tablespoons minced toasted walnuts
  • 2 teaspoons Dijon mustard
  • 1 ½ teaspoons minced shallot

Add in a slow, steady stream, whisking constantly:

  • ⅓ cup extra-virgin olive oil
  • ⅓ cup walnut oil (or use an additional ⅓ cup extra-virgin olive oil)

Taste and adjust the seasonings.
