This tart formula is our favorite for almost any green salad.
Combine in a pint jar with a tight-fitting lid:
- ¾ cup extra-virgin olive oil
- (Finely grated zest of 1 lemon)
- ¼ cup plus 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 1 garlic clove, minced or grated on a rasp grater
- ½ teaspoon salt
- ½ teaspoon black pepper
Shake vigorously to combine.
