PEANUT DIPPING SAUCE
About 1 ¾ cups

Some version of this sauce is served all over Southeast Asia, with the small skewers of meat and chicken known as satay, or with many other dishes from Summer Rolls to grilled meats.

Combine in a medium saucepan:

  • 1 cup canned coconut milk
  • ½ cup smooth peanut butter
  • 4 teaspoons palm sugar or brown sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon red curry paste or Massaman curry paste, store-bought or homemade

Whisk in thoroughly:

  • ½ cup hot water

Cook, stirring occasionally, over low heat until the flavors are well blended, about 15 minutes. Stir into the peanut sauce:

  • 2 teaspoons lime juice or rice vinegar, or to taste
