LEMON AND PARSLEY BUTTER
About ½ cup

Also called beurre maître d’hôtel, this is delicious over grilled or broiled steak.

Beat together in a medium bowl:

  • 1 stick (4 ounces) butter, softened
  • 2 tablespoons finely chopped parsley
  • 1 ½ to 2 tablespoons lemon juice, to taste
  • Salt to taste

Use immediately or roll, chill, and store as directed, above.
