GRILLED TOMATO SAUCE
About 3 ½ cups

Prepare a medium-hot grill fire, or position an oven rack 6 inches from the heat. Preheat the broiler.

Place on the grill or under the broiler:

  • 12 plum or Roma tomatoes or 6 large tomatoes (about 3 pounds)

Turn with tongs as the skin chars. When lightly charred all over, cool, then puree or chop in a food processor or blender. Transfer to a medium bowl and stir in:

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons chopped basil
  • Salt and black pepper to taste
