PIZZA SAUCE
About 3 cups

This raw puree “cooks” on the pie. You might be tempted to add raw garlic here, but pizzas bake through before the garlic can mellow out, leaving a harsh flavor. If garlic is a must in your pizza sauce, use pureed Marinara Sauce.

Puree in a blender or food processor until mostly smooth:

  • One 28-ounce can whole tomatoes, drained
  • 2 tablespoons olive oil
  • 3 fresh basil leaves
  • (¼ teaspoon red pepper flakes)
  • (¼ teaspoon dried oregano)
  • ¼ teaspoon salt
