WINE PLUM SAUCE
About 1 cup

A deeply flavored sauce for roast chicken, duck, or goose.

Combine in a medium saucepan and bring to a boil over medium-high heat:

  • 8 ounces red or purple plums, pitted and sliced
  • 1 cup dry red wine

Boil until reduced to a syrup, about 15 minutes. Let cool for 10 minutes, then pass through a food mill or puree in a blender or food processor and strain through a fine-mesh sieve. Return the puree to the pan and stir in:

  • ¼ cup honey
  • ¼ cup chicken or vegetable stock or broth
  • 1 tablespoon soy sauce

Simmer until thickened, about 10 minutes. Season to taste with:

  • Salt and black pepper
