BASIC CREAM SAUCE
About 1 cup

A simpler alternative to Béchamel. This rich sauce is especially delicious with sautéed wild mushrooms or pasta.

Combine in a medium saucepan:

  • 2 cups heavy cream
  • 2 tablespoons chopped thyme or rosemary
  • (2 tablespoons lightly crushed juniper berries)

Bring to a rolling boil, stirring occasionally with a whisk only to prevent boiling over. Reduce the heat slightly and reduce by half. Strain through a fine-mesh sieve. Season to taste with:

  • Salt
