ADDITIONS TO MEATLOAF

If you are experimenting, first mix a very small batch and fry a patty of the mixture to taste before mixing and cooking an entire loaf. For each 9 × 5-inch loaf, add any of the following or a combination:

  • ½ cup finely grated carrots, potatoes, or sweet potatoes
  • ½ cup Sautéed Mushrooms
  • ¼ cup coarsely chopped toasted almonds, pecans, or walnuts
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon Dijon mustard or drained prepared horseradish
  • 1 tablespoon chopped thyme, oregano, basil, dill, or minced chives

Marion was especially partial to adding:

  • ¼ cup chopped green olives and ¼ cup chopped water chestnuts

Meat
