BECKER LAMB PATTIES

Combine in a large bowl and mix, using your hands, until just combined:

  • 1 pound ground lamb
  • Finely grated zest and juice of ½ lemon
  • 2 teaspoons sherry
  • 2 teaspoons soy sauce
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme, crumbled
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 dashes hot pepper sauce

For use in flatbread sandwiches, shape the mixture into twelve 2-inch-wide patties; for serving like a hamburger, form the mixture into four 1-inch-thick patties. Heat in a large skillet over medium-high heat:

  • 2 tablespoons vegetable oil

Fry the 2-inch patties for 2 minutes on each side; fry the larger burgers for 3 minutes on each side for rare, 4 minutes for medium, or 5 minutes for well-done. Serve as a filling for:
