STEAK FAJITAS

Prepare the meat and set up the grill for:

  • Carne Asada

While the grill heats up, heat in a large skillet over medium-high heat:

  • 2 tablespoons vegetable oil

Add and cook, stirring, until tender and browned, about 7 minutes:

  • 2 medium onions, halved and thinly sliced
  • 2 green bell or poblano peppers, or a combination, cut into strips
  • ½ teaspoon salt

Toss with:

  • 1 teaspoon dried oregano

Remove from the heat and cover to keep warm. Grill the meat as directed. While the meat rests, warm on the grill:

  • Twelve 6-inch flour tortillas

Slice the steak across the grain into thin strips. Serve with the tortillas and:

To assemble, place some steak and sautéed onions and peppers on each tortilla, and top as desired.
