Gizzards have tremendous flavor, and the long, slow cooking softens their characteristic “snap.” In fact, even the layer of tendon is tender enough to eat (though you may still want to trim it off). Prepare Duck or Goose Confit, substituting 2 pounds duck or chicken gizzards, trimmed, if desired. Cook until tender, 3 to 4 hours. Store and brown as directed.
