Braising bone-in chicken pieces but want crispy skin? Remove the skin from the chicken pieces, crisp in the oven, and serve on top of the finished dish. This requires at least one pair of rimmed baking sheets that nest, or one that can lie flat inside of a larger baking sheet.
Preheat the oven to 350°F. Have ready:
Line a rimmed baking sheet with parchment paper and stretch the pieces of skin out on the parchment, making sure the pieces do not overlap. Lightly sprinkle each piece of skin with:
Avoid the temptation to generously season the skin—a little salt goes a long way here. Place another sheet of parchment paper over the skin and nest a rimmed baking sheet on top so the pieces are pressed flat. Bake until the skin is golden brown and crisp, about 40 minutes.
