ROASTED SMALL GAME BIRDS
3 to 6 servings

If desired, the birds may be seasoned and rubbed with butter, then broiled 6 inches from the heat, turning frequently, until cooked, 4 to 10 minutes.

Preheat the oven to 500°F. Pat dry:

  • 6 small game birds

Sprinkle with:

  • Salt and black pepper

Rub the birds with:

  • 3 tablespoons butter, softened

Place on a rack in a roasting pan. Roast for 5 to 12 minutes, depending on the size of the birds. The juices should run light pink when the meat is pierced. Let rest loosely tented with foil for 5 minutes before serving.

Serve with:

Serve the birds on:

  • Toasted buttered bread

Pour the gravy over them. Garnish with:

  • Chopped parsley
