NASHVILLE HOT CHICKEN

Pioneered by the owners of Prince’s Hot Chicken Shack in Nashville, Tennessee, this chicken is so spectacularly crisp, spicy, and succulent that the first time we ate it we did so in reverent silence. For the full experience, place each serving of the fried chicken on top of the white bread so the bread soaks up the flavorful oil and chicken juices.

Preheat the oven to 200°F. Prepare and keep warm in the oven:

  • Crispy Deep-Fried Chicken

After frying the first batch of chicken, carefully pour ½ cup of the frying oil into a medium heatproof bowl and whisk in:

  • 1 to 4 tablespoons cayenne pepper (know your limits)
  • 1 tablespoon brown sugar
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt

When all the chicken is fried, brush the spiced oil on each piece (you may not use all the seasoned oil) and serve immediately with:

  • Slices of untoasted white sandwich bread
  • Sliced dill pickles
