Prepare Browned or Buttered Bread Crumbs, using ¾ cup fresh bread crumbs and 3 tablespoons olive oil or butter. Prepare broiled fish as directed in Grilled or Broiled Fish Fillets. If the fillets are ½ inch thick or less, omit the olive oil or butter and spread the bread crumb mixture on them before broiling. Rub thicker fillets with some olive oil or melted butter and spread the bread crumb mixture on them 3 to 4 minutes before they are done. Serve with parsley and lemon wedges or any of the suggestions in Sauces for Fish.
