ADDITIONS TO FISH BAKED IN PARCHMENT

For each serving, add to the parchment packet:

  • 2 tablespoons thinly sliced leeks, 2 teaspoons white wine, ½ teaspoon fresh herbs (thyme, tarragon, savory, chervil), and ½ garlic clove, thinly sliced
  • 1 tablespoon minced shallots, ¼ cup sliced mushrooms, 2 teaspoons heavy cream, and 2 teaspoons minced parsley or chives
  • cup cooked wild rice, ½ garlic clove, thinly sliced, and 2 thin lemon slices
  • ¼ cup halved cherry tomatoes, 2 tablespoons sliced pitted green olives, and 1 teaspoon small capers
  • cup cooked jasmine rice, 2 thin lime slices, 1 garlic clove, thinly sliced, 1 teaspoon minced lemongrass, 2 cilantro sprigs, ¼ teaspoon red pepper flakes or ½ Thai chile, thinly sliced, and a dash of fish sauce
  • cup cooked couscous, 2 tablespoons Charmoula, and ¼ cup very thinly sliced red onion
