COCONUT SHRIMP

Prepare Deep-Fried Shellfish II, using shrimp and the beer batter, but substitute orange juice for the beer. After dipping the shrimp in the batter, press them into a mixture of 3 cups shredded unsweetened coconut and 1 cup dry bread crumbs. Fry as directed. If desired, serve with (Fruit Salsa).
