QUICK SKILLET SHRIMP

Quality, fresh shrimp need little more than brief cooking, butter, and lemon juice.

Place in a large nonstick skillet:

  • 1 to 1½ pounds shell-on shrimp, deveined, above

Cover and cook in their own juices on medium to medium-high heat for 2 minutes. Uncover, stir, and cook until the shells turn pink and the flesh is opaque, an additional 2 minutes. Cover the table with newspaper, get a roll of paper towels, and serve immediately with:

  • Melted butter
  • Lemon wedges
