GRILLED OR BROILED SOFT-SHELL CRABS

Prepare a medium-hot grill, or preheat the broiler and position an oven rack 2 or 3 inches from the heating element.

Mix in a small bowl:

  • 4 tablespoons (½ stick) butter, melted, or olive oil
  • (1 garlic clove, minced or grated)
  • (Pinch of cayenne pepper)
  • Salt and black pepper to taste

Brush the butter mixture over both sides of:

  • 8 soft-shell crabs, cleaned and patted dry

Grill or broil until firm, about 4 minutes each side, taking care not to burn the shells, especially the claws. They do not turn red as other crabs do. Serve with:

  • Lemon or lime wedges and hot pepper sauce, or melted butter
