BUTTERED BAKED MUSSELS
Allow 10 to 12 per serving

Preheat the oven to 450°F. Place on a large rimmed baking sheet in a single layer:

  • Mussels, scrubbed and debearded

Heat in the oven just until the shells open; do not overcook. Remove the upper shell from each mussel, working over a bowl to catch the liquor. If any has escaped onto the baking dish, strain and add it to the liquor in the bowl. Serve the mussels on their lower shells accompanied by small dishes of:

  • Melted butter (flavored with minced garlic, if desired)

Serve the liquor in cups along with the mussels and garnish with:

  • Lemon wedges

The liquor is delicious to drink, but, to avoid any residue of sand, don’t entirely drain the cup.
