GRILLED OYSTERS
Allow 6 oysters per serving

You may grill many oysters in their shells right on the coals without toughening them, but if you have the smaller Kumamoto or Olympia oysters, put them on a piece of foil before placing them on the grill (and double the number per serving).

Prepare a hot grill fire. Scrub well:

  • Oysters

Place them on the grill grate, cupped side down. Grill until the shells pop open. Remove carefully, so as not to spill the juices. Serve with:

  • Lemon wedges
  • Melted butter
  • Hot sauce
