Bulgur can also be used in this recipe, or mix couscous and bulgur together for a tasty variation.
Toss together in a large bowl:
- 3 cups cooked couscous (about 1⅓ cups uncooked)
- Vinaigrette, to taste
Add and toss to combine:
- ¼ cup pine nuts, toasted
- 1 yellow bell pepper, finely diced
- 6 dried apricots, chopped
- ⅓ cup golden raisins
- 2 tablespoons chopped cilantro, parsley, or minced chives
