COUSCOUS WITH PINE NUTS AND RAISINS
6 to 8 servings

Bulgur can also be used in this recipe, or mix couscous and bulgur together for a tasty variation.

Toss together in a large bowl:

  • 3 cups cooked couscous (about 1⅓ cups uncooked)
  • Vinaigrette, to taste

Add and toss to combine:

  • ¼ cup pine nuts, toasted
  • 1 yellow bell pepper, finely diced
  • 6 dried apricots, chopped
  • cup golden raisins
  • 2 tablespoons chopped cilantro, parsley, or minced chives

Season to taste with:

  • Salt
