Muesli, also called Swiss oatmeal, was developed in the late nineteenth century by a Swiss physician. Eat it at room temperature or warmed, with milk, yogurt, cream, or sliced fruit on top.

If desired, toast the oats before soaking them. Preheat the oven to 350°F. Spread out on a rimmed baking sheet:

  • 1 cup old-fashioned rolled oats

Toast until fragrant and lightly browned, about 10 minutes. Let cool completely. Or skip straight to soaking. Place the oats in a bowl and add:

  • 1 cup boiling water
  • ¼ teaspoon salt

Cover and soak overnight. Before serving, stir in:

  • Up to ½ cup chopped dried fruit
  • cup chopped toasted walnuts, almonds, or pistachios
  • (½ cup grated tart apple)
  • (¼ cup flaked or shredded unsweetened coconut, toasted)
  • 2 tablespoons honey or brown sugar, or to taste
