ORECCHIETTE WITH SAUSAGE AND BROCCOLI RABE
4 to 6 servings

Heat in a large skillet over medium heat:

  • 1 tablespoon olive oil

Add:

  • 1 pound store-bought Italian sausage, removed from its casings, or homemade

Cook, breaking up the meat with a spoon, until nicely browned, about 8 minutes. Stir in and cook for 1 minute:

  • 3 large garlic cloves, minced
  • ¼ teaspoon red pepper flakes

Stir in:

  • 1 large bunch broccoli rabe, trimmed and chopped

Cover and cook just until tender, about 5 minutes. Season to taste with:

  • Salt and black pepper

Meanwhile, cook in a large pot of boiling salted water:

  • 1 pound orecchiette or cavatelli

Reserve ½ cup of the pasta water. Drain the pasta, add to the skillet along with the pasta water, and toss over low heat. Serve sprinkled with:

  • Grated Romano
