SPAGHETTI AGLIO E OLIO (SPAGHETTI WITH GARLIC AND OIL)

A simple sauce of olive oil and garlic is one of the purest ways of enjoying good pasta.

Cook in a large pot of boiling salted water:

  • 12 ounces dried spaghetti or linguine or 1 pound fresh

Meanwhile, heat in a large skillet over medium heat:

  • 3 tablespoons olive oil

Add and cook, stirring, until fragrant, about 2 minutes:

  • 3 large garlic cloves, thinly sliced
  • (1 dried red chile pepper)

Discard the chile pepper, if used. Reserve ½ cup of the pasta water. Drain the spaghetti, add the hot pasta to the skillet along with the pasta water, and toss to combine. Season to taste with:

  • Salt and black pepper
