Our preferred dough for lasagna and wide ribbon pasta. Do not roll it to the thinnest setting of a pasta machine, as the semolina flour is somewhat coarse and the dough tends to tear if rolled too thin. Prepare Fresh Pasta Dough, substituting 1 cup semolina flour for the same amount of all-purpose flour.
