SEASONED TEMPEH CRUMBLES
4 servings

Tempeh crumbles make an excellent stand-in for ground meat. Here, they are seasoned like Italian sausage and could easily serve as the basis for a tomato sauce. For use in other dishes, try substituting for ground meat in Picadillo, Spiced Ground Meat for Tacos, Nachos, or Sloppy Joes, adjusting the amount of tempeh accordingly.

Coarsely crumble with your hands:

  • 12 ounces tempeh (steamed, above, if desired)

Warm in a medium skillet over medium heat:

  • 3 tablespoons vegetable or olive oil

Add and cook until fragrant, about 30 seconds:

  • 3 garlic cloves, minced

Stir in the tempeh and cook, stirring frequently, until browned, 8 to 10 minutes. Stir in:

  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • (½ teaspoon fennel seeds)
  • ½ teaspoon salt

Continue to cook, stirring, until the mixture is fully combined, well browned, and fragrant, about 2 minutes more.
