Boil until nearly tender:

  • 5 medium sweet potatoes

Meanwhile, preheat the oven to 375°F. Grease a 13 × 9-inch baking dish.

Drain the sweet potatoes, peel, and cut lengthwise into ½-inch-thick slabs. Place in the baking dish and season to taste with:

  • Salt

Sprinkle with:

  • ¾ cup packed brown sugar
  • 1½ tablespoons lemon juice
  • ½ teaspoon ground ginger
  • (Finely grated zest of 1 lemon)

Dot with:

  • 2 tablespoons butter

Bake, uncovered, until glazed, about 20 minutes.
