MASHED SWEET POTATOES
4 to 6 servings

Boil or bake, above, until thoroughly tender:

  • 2 pounds sweet potatoes, scrubbed

Let stand until cool enough to handle. Remove the skins, then mash, rice, or put through a food mill into a bowl. Add:

  • 4 tablespoons butter, softened, or to taste
  • Salt to taste

Thin with:

  • Warm heavy cream or orange juice

For a savory dish, see Additions to Mashed Potatoes. For a sweeter dish, season with any of the following:

  • ½ cup chopped pineapple, or to taste
  • ½ cup chopped pecans or ¼ cup chopped black walnuts, toasted
  • 3 tablespoons diced candied ginger or ½ teaspoon ground ginger
  • 2 tablespoons brown sugar
  • 1 tablespoon bourbon or dry sherry
  • 1 teaspoon finely grated orange or lemon zest
  • Pinch of ground cloves or ½ teaspoon ground cinnamon

Beat the potatoes with a fork, whisk, or electric mixer until light. Serve immediately, or reheat at serving time at 375°F in a buttered baking dish.
