SUNCHOKES IN GARLIC BUTTER

Wash, peel, and cut into 1-inch pieces:

  • 1½ pounds sunchokes

Steam or boil in well-salted water until tender. Test with a fork after 15 minutes. Drain.

Meanwhile, melt in a small skillet:

  • 3 tablespoons butter

Add and cook until fragrant but not browned:

  • 2 garlic cloves, minced

Add the drained sunchokes and stir to coat in the butter. Remove from the heat and stir in:

  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
