ROASTED PLANTAINS

Preheat the oven to 400°F. Grease a baking dish that will hold the plantains in a single layer.

Cut off the top and bottom, slit the skin lengthwise, and peel:

  • Brown-black ripe plantains

Arrange in a single layer in the prepared baking dish and bake until the flesh is fork-tender, about 40 minutes. Serve (as you would a baked potato) with:

  • Butter
