CHARRED SHISHITO OR PADRÓN PEPPERS

These flavorful peppers are often served as an appetizer, but we enjoy them as a summer side dish as well.

Heat in a large heavy skillet (such as cast iron) over medium-high heat:

  • 1 tablespoon vegetable oil

When the oil is hot, add:

  • 8 ounces shishito or padrón peppers

Cook, tossing the peppers in the skillet occasionally, until they are soft and unevenly charred, about 4 minutes. Season to taste with:

  • Salt
  • Lemon or lime juice
