GRILLED SWEET ONIONS

Large red onions can be used when sweet onions are unavailable. These are a great topping to grill alongside hamburgers, sausages, or steaks.

Prepare a medium-hot grill fire.

Peel and slice into 1-inch-thick rounds:

  • 3 large sweet onions

Carefully impale each slice horizontally through the center with a skewer so they will not fall apart. Rub with:

  • ¼ cup vegetable oil
  • Salt and black pepper to taste

Grill until tender and lightly charred, turning once, about 6 minutes per side. Remove the skewers to serve.
