GRILLED MUSHROOMS

The best mushrooms for grilling directly on grill grates are portobellos, large maitakes, lobsters, chicken of the woods, and large shiitakes. For smaller mushrooms, use a grill basket or grill pan, or roast them instead, above.

Prepare a medium-hot grill fire. Remove the stems from:

  • 2 pounds mushrooms

Toss in a bowl with:

  • ¼ cup olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Place the mushrooms on the grate (or in a grill basket) and grill, turning once, until tender, 5 to 8 minutes a side. Place on a large platter and garnish with:

  • Chopped parsley

Serve on garlic-rubbed toast as for Bruschetta, or as a side dish.
