SPINACH WITH PINE NUTS AND RAISINS

This dish is the perfect combination of sweet and savory, with a buttery, toasty flavor from the pine nuts.

Place in a heatproof bowl:

  • cup golden raisins

Bring to a boil in a small saucepan, stirring to dissolve the sugar:

  • cup white wine vinegar or cider vinegar
  • 2 teaspoons sugar
  • 1 teaspoon mustard seeds
  • ½ teaspoon red pepper flakes

Pour the boiling vinegar mixture over the raisins, cover, and let plump while you finish the rest of the dish. Heat in a large skillet over medium heat:

  • 2 tablespoons olive oil

Add and sauté until fragrant, about 1 minute:

  • 2 garlic cloves, minced or grated

Add:

  • 1 pound mature spinach, well washed and tough stems trimmed
  • ¼ teaspoon salt

Sauté just until the spinach is wilted. Toss the spinach with as many of the raisins as desired and serve topped with:

  • 2 tablespoons toasted pine nuts or chopped toasted almonds
